Fennel

Fennel is actually from the carrot family and is a highly aromatic herb often used in cooking. The bulb is often used as a vegetable, and the fruits (dried seed looking bits) are an  anise-flavored spice used all over the world to flavour dishes. 

For some of us, you might be more familiar with fennel’s cheeky side. It is one of the main ingredients of Absinthe, the 75% Swiss spirit known for its distinct colour.

The feathery fronds have a citrus flavour and can be used as a garnish, or added to a chicken or fish stuffing; the bulb has a wonderful earthy taste and is used as a vegertable, and the fruits (seeds) are often dried and used as a spice all over the world.

Care: Best grown in moist, well drained soil.
